I am so excited to share these with you because they are a COMPLETE crowd pleaser every time. These are my go to “please bring a dessert” recipe.

The funniest part is, I often get asked for the recipe and essentially i found it by Googling “Brownie Recipe” and using the one at the top of the list. Then one day I suddenly had the lightbulb moment to combine the brownie recipe, with the icing recipe (with a few adjustments here and there)  I’d grown up eating, and presto – the perfect marriage right after Will and Kate. (I know, I know…they’re not really perfect. Her hair is definitely better than his)

I love them because:

1.) They’re the perfect balance of sweet but not too sweet

2.) They’re chewy

3.) They have ESPRESSO in them

4.) They’re so easy and quick to make

Ok, enough talking. I don’t know why blogs always post a huge long blab before they actually post the recipe so I’ll cut myself short and without further stalling..

The Best Chewy Brownies

Prep Time: 15 Minutes

Cook Time: 25-30 Minutes

Brownie Recipe

1/2 C. of melted butter

1 C. White Sugar

2 Eggs

1 Tsp. Vanilla Extract

1/2 C. All Purpose Flour

1/3 C. Cocoa Powder

1/4 Tsp Salt

1/4 Tsp. Baking Powder

1 C. Chopped Walnuts (optional)

Now this is generally when people tell you combine wet ingredients in a bowl, but…ain’t no body got time for dat. So, just combine everything in this order, IN THE SAME BOWL. Mom with time management issues speaking here.

  1. Preheat oven to 350 C
  2. Melt butter on stove top (or if you’re too impatient like me, do it in the microwave)
  3. Combine sugar, eggs & vanilla in mixing bowl. Add melted butter.
  4. Add flour, cocoa powder, salt, baking powder and optional chopped walnuts. Combine well
  5. Pour into greased 8×8 pan
  6. Place in oven, set timer for 25 minutes, go do a load of laundry and get halfway through another chore
  7. Check after 25 minutes – you know the drill – put back in the oven if middle doesn’t look set. (Use your Martha Stewart spidey senses)
  8. Let cool

Icing Recipe

1/2 C. Room Temperature Butter

1 C. Icing Sugar

1/3 (heaping) C. Cocoa Powder

1 Tsp. Ground Coffee

1 Tbsp. Milk (Cow or other, I’ve used Almond before)

1 Egg White

  1. Whip butter, icing sugar and cocoa powder together
  2. Add milk, vanilla and egg white (or skip the egg white and add slightly more milk if your mom freaked you out about salmonella as a child)
  3. Add ground coffee to taste (some like more coffee flavour, some like less)
  4. Whip together till fluffy and make sure you taste it three times at least (you know enough so that you are running low on little spoons in the drawer and your teeth begin to feel a little sugary – quality control here friends. )
  5. This icing is great because you can definitely tailor it to sweet or less sweet tastebuds, I like a little more coffee and a little more cocoa but some might like it a little more dentist employing sweet.

Wait till brownies cool slightly, spread icing on (the warm will melt the icing making it a little gooey). Service with a scoop of ice cream and viola! You’re Canada’s Next Great Baker. At least in my mind
